Then, with a little magic (aka chemistry), your cream transforms into ice cream by shaking the bags for approximately 10 minutes.

Is it true, however, that manufacturing ice cream in a bag compromises flavor? “It won’t be as smooth or creamy because the ingredients won’t be as well blended or homogenized, and it won’t be frozen as quickly,” Van Leeuwen adds. “Having said that, I am quite pleased with the outcomes of this approach. It’s refreshing, and the texture difference between this and factory-made ice cream is very noticeable.”

Recipe for homemade ice cream in a bag
You’re ready to create ice cream now that you have everything you need (remember to stock up on ice!). The following items are needed for Pretty Providence’s recipe:
Skaggs and Bailey’s excellent handmade ice cream is prepared in the following manner.
- Fill a sandwich-size Ziploc bag halfway with half & half, sugar, and vanilla extract.
- Optional: Add extra flavors or mix-ins to the bag, such as chocolate syrup or crumbled Oreo cookies, and mix well.
- Before closing firmly, remove as much air as possible.
- Place it into a second sandwich-size Ziploc and close firmly (we don’t want any leakage).
- Fill the gallon-sized bag halfway with ice and rock salt, then add the ice cream sandwich bags.
- Remove the air from the big bag and close it.
- Squeeze and shake the ice cream bag till it produces ice cream.
- Shake for 10 minutes for a rich milkshake consistency. Shake for 15 minutes for a firmer ice cream.
- Remove the full bag from the rest of the bags and have fun!
It’s essential to remain patient while you’re shaking, according to Skaggs and Bailey. “When your arms aren’t accustomed to shaking for that long,” they explain, “ten minutes may seem like a long time.” “Make a game out of it (like hot potato) or have a dance party!” says the author.
We experimented with this formula in both plastic and Stasher bags. It was a great method to create delicious ice cream that was also a lot of fun. The ten minutes went much faster than we anticipated, but if you have kids, it would be a fun backyard activity. One suggestion: while shaking the bags, wrap them in a towel or two. Your hands will be less damp and chilly as a result.
